Polyunsaturated fats may be the greatest health scam perpetrated on people. Unlike benefits from short- chain coconut, cacao, and clarified-butter fats, which typically are just burned for energy and neither stored, nor elongated, polyunsaturated fats break down into malondialdehyde, a known poison of vitalethine's monooxygenase receptor and probably vitaletheine's sulfenic acid. This is particularly true under oxidative stress. While some long chain, unsaturated fats are beneficial, and even essential (e.g., GLA, EPA, and DHA) others poison the monooxygenase receptor for vitalethine. Long-chain saturated fat often poisons, whereas phosphatidyl serine with EPA or DHA in the 2-position diminishes this enzyme's detrimental peroxide (HOOH) rate.
